The point of veganism is to not eat any animal products...if a person eats eggs, they are automatically not vegan. Please get your definitions straight.

What is a vegan replacement for eggs in baking?Hi im an agroindustrial engineer...First of all eggs are full of protein and fat, giving any recipe the colligative properties from protein and (in simple terms) the lubrication and taste that fat gives to food.
I've never heard anyone trying to substitute whole eggs in a recipe but from my experience I will recommend the following....
For each egg reaplaced:
Approx. 1 teaspoon of any type of oil. I recommend an oil that will withstand high temperatures and not oxidize... That will be canola oil, or the normal cooking oil.
(This will replace the yolk)
Approx. A protein substitute...Use gelatin.... Gelatin is also a protein (to make jello) that has very similar properties than that of eggwhites. I dont know how gelatin comes in the USA (im from S. America) but in my country gelatin comes as a powder. I wouldn't know how much to use (per egg white), but i guess trial and error is the best way
(this will substitute the egg whites)
